Paleo, raw, chocolate granola recipe

Hi everybody! Here is a requested video for Paleo granola. It is absolutely delicious and it doesn’t contain any refined sugars or cheap fillers (grains) like store bought granolas do.

It is also raw, which makes it even better, since it ensures that all the enzymes and nutrients from the nuts, seeds and honey are intact. The nuts and seeds have been previously soaked in salty water, this process make their nutrients more available and deactivates enzyme inhibitors which are naturally present in them.

To soak the nuts and seeds, simply place them in a mason jar, cover with water and add 1 tbsp of salt. Leave overnight.

Ingredients:
1 cup almonds
1 cup walnuts
1 cup brazil nuts
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1 cup coconut flakes (unsweetened)
1 tsp salt
2 tbsp raw cacao powder
1 tbsp vanilla extract
1-2 tbsp ground cinnamon
1 cup of liquid: honey and coconut oil, the amount depends on how sweet you want your granola.
1 cup of dried fruit or chocolate chips (optional)

Preparation:
Roughly chop the big nuts and mix with the seeds and coconut flakes.
In a saucepan, on low heat, melt the coconut oil and add all the other ingredients, mix well. If using dried fruit, do not add it yet.

Add the chocolate sauce to the nut mixture, make sure to coat everything well with it.

Place in the dehydrator or oven in a thin layer and dehydrate at no more than 120o F until ready, this can take from 6 to 24 hours. Once it’s ready, add the dried fruit.
